Pasta Water and Salt

Cooking pasta well starts before the pasta even hits the pot: the amount of water and salt sets up everything that follows. The classic kitchen ratio is simple — 1 litre of water and 10 g of salt for every 100 g of dry pastaabout 1 quart of water and 10 g of salt for every 4 oz of dry pasta. Scaling that ratio to the portion you are cooking is all this calculator does.

A generous volume of water matters more than most people expect. When pasta is dropped into a small amount of water, the temperature plunges and the strands settle against each other and stick. A large, vigorously boiling pot recovers its heat quickly and gives the pasta room to circulate, so it cooks evenly and stays separate.

The pasta-to-water ratio

For a quantity of dry pasta PP, the water WW and salt SS follow directly from the ratio:

Why salt the water

Salt does two jobs. The obvious one is flavour: pasta cooked in unsalted water tastes flat no matter how good the sauce is, because the seasoning is added from the inside as the pasta absorbs water. The target concentration of about 10 g per litreabout 10 g per quart is close to a 1 percent brine — the water should taste pleasantly seasoned, not harshly salty. Add the salt once the water is boiling and stir it in before the pasta goes in. Most of that salt is poured off with the cooking water, so only a small fraction is actually eaten.

Skip the splash of oil that some recipes suggest. It floats on the surface, does nothing to prevent sticking, and can leave a film that makes sauce slide off the finished pasta. Plenty of water and a stir in the first minute or two are all you need.

No — adding oil to the boiling water is unnecessary and can be counterproductive. Oil floats on top and does little to stop the pasta sticking; the real fix is plenty of water (1 litre per 100 g of pasta) and an occasional stir in the first couple of minutes. Worse, an oily coating can make the cooked pasta slippery so sauce slides off instead of clinging. Save the oil for the sauce or the serving dish.
