The minutes-per-pound rule is the standard starting point for roasting a whole turkey. At 325 °F (165 °C), an unstuffed bird roasts at about 13 minutes per pound, while a stuffed one takes approximately 15 minutes per pound. These figures come from USDA guidelines and account for the insulating effect of the stuffing on the cavity temperature.

Roasting time calculation

For a turkey of weight $W$ pounds, the estimated oven time $T$ in minutes is:

These are estimates. Oven calibration, the bird's starting temperature, and pan type all affect the actual time. A meat thermometer is the only reliable way to confirm doneness — the thickest part of the thigh (not touching bone) must reach 165 °F (74 °C).

The 165 °F rule

The USDA food-safety standard requires 165 °F (74 °C) at the thickest part of the thigh, the innermost part of the wing, and the thickest part of the breast. For stuffed turkeys, the stuffing temperature must also reach 165 °F. After the bird comes out of the oven, resting it for at least 30 minutes allows carryover cooking to finish and the juices to redistribute, making the meat easier to carve.

Thawing

A frozen turkey must be thawed before roasting. Two safe methods are recognised:

Refrigerator method (recommended): Allow approximately 24 hours for every 4–5 lb of turkey in a refrigerator held at 40 °F (4 °C) or below. A 14 lb bird needs about 3–4 days. Keep the turkey on a tray in its original sealed wrapper to contain drips. A turkey thawed this way can be held in the refrigerator for an additional 1–2 days before cooking.

Cold-water method: Submerge the turkey in its sealed wrapper in cold water and change the water every 30 minutes to keep the temperature below 40 °F. Allow about 30 minutes per pound — a 14 lb bird takes roughly 7 hours. A turkey thawed by this method must go directly into the oven and cannot be refrozen without cooking first.

Thawing on the countertop at room temperature is not recommended because the outer layers enter the bacterial danger zone (40–140 °F / 4–60 °C) before the centre has thawed.
