Yeast Conversion

Baking recipes call for yeast in three common forms — active dry, instant (rapid-rise), and fresh (cake) yeast — and the three are not interchangeable spoon for spoon. Because each form holds a different amount of live yeast per gram, swapping one for another means scaling the weight. This calculator converts between all three by weight so a recipe still rises the way it should.

The three forms of yeast

Active dry yeast has coarse granules coated in a layer of dormant cells. It stores well at room temperature and is the reference point most conversion tables are built around.

Instant yeast (sold as rapid-rise, quick-rise, or bread-machine yeast) is milled finer and dried so that it can be stirred straight into the flour. It is a little more potent than active dry, so recipes need slightly less of it.

Fresh yeast (also called cake or compressed yeast) is a soft, crumbly block that is mostly water. It is prized for its flavour but is perishable and takes far more weight to match the leavening power of a dry yeast.

The conversion ratios

Every ratio is anchored to active dry yeast, treated as 1 part:

To convert from one form to another, divide the target ratio by the source ratio to get a conversion factor, then multiply the original amount:

For example, active dry to instant gives a factor of 0.75 ÷ 1 = 0.75, and active dry to fresh gives 3 ÷ 1 = 3.

Worked example

Suppose a recipe lists 0.25 oz7 g of active dry yeast, but you only have instant yeast. The factor is:

So the substituted amount is:

You would use about 5.25 g0.19 oz of instant yeast in place of the active dry called for. Going the other direction — instant to fresh — the factor would be 3 ÷ 0.75 = 4, so 7 g of instant would become 28 g of fresh.

Handling still matters

Converting changes only the quantity, not the method. Active dry and fresh yeast are usually softened in warm liquid before mixing, which doubles as a freshness check, while instant yeast can go directly into the dry ingredients. If any yeast is near its date, dissolving it in warm water with a pinch of sugar and watching for foam is a quick way to confirm it is still active before it goes into the dough.

Rise times also shift with the yeast type, the dough temperature, and how much yeast a recipe uses relative to flour — often around 1 to 2 percent instant yeast by flour weight for a same-day dough. Treat the converted amount as a starting point and judge the rise by how the dough looks and feels rather than the clock.
